Super satisfying noodle bowl

Hello dear followers,

Last week I posted my all time favorite noodle bowl ( AGAIN ).  I cannot get enough of this dish; don’t tell anyone but I make this at least once a week when I snuggle up on the couch.  It is healthy, nourishing and satisfying with a little kick.  If I’m feeling particularly lazy I buy a prepared Thai vegetable mix, but in this recipe I combine my favourite greens from scratch.  It all depends how much time you have or how long you want to spend in the kitchen 😉

What you’ll need for 1 big bowl (serves one hungry person, like me):

50 grams of Buckwheat soba noodles (check the label, lots of brands cheat and make their noodles with 50% regular flour and 50% buckwheat flour, go for the 100 % buckwheat )

4 tbsp tamari
1 tbsp honey
1 cm fresh grated ginger
garlic ( as much as you like)
1 tbsp lime juice
1 tbsp tahini

150 grams tempeh
2 tbsp tamari
0.5 tbsp honey

100 grams sugar snaps
100 grams of green asparugus
100 grams paksoi

A handful of spring onions
A handful of sprouts

Cilantro/Coriander (as much as you prefer, to garnish)
Half a chili pepper

Cooking instructions:

Cook your noodles and let them cool, then steam all your veggies and set them aside.
Mix all your dressing ingredients.
Cut the tempeh into pieces, heat coconut oil in a grill pan and grill your tempeh until it gets crispy. When it’s done, add 2 tbsp of tamari and 0.5 tbsp honey and bake for another minute until caramelized.
Mix your noodles with the dressing, add your greens and top it up with tempeh, chilipepper, spring onion, sprouts and as much cilantro as you like.
